Thai style minced pork omelette -Kai jeow moo sub (ไข่เจียวหมูสับ)

When we’re speaking of Omelette, most people would automatically think of breakfast or brunch, but if you have been to Thailand, you may think differently. Thai style omelette is different from the western style omelette served as breakfast. It is the simplest Thai dish and been around the Thais as long as I can remember. Thai style omelette can be served for breakfast, lunch, or dinner. It can be ordered in most of the stir fry street food restaurants here in Thailand.
It was actually the very first dish I was taught to cook since young age and I am sure it’s also other Thai’s first menu when they learn how to cook as well. There are only few ingredients into this dish and mostly things you already have in your kitchen.
The ingredients are:
1. 2 Eggs
2. Minced pork
3. Soy sauce or fish sauce
4. Pepper
5. Diced onions (can be substituted with green onions or scallions)
6. Cooking oil
The steps are as simple as:
1. Beat the eggs and add minced pork, soy sauce, pepper, and diced onions into a large bowl
2. Heat the pan and add cooking oil
3. When the oil is hot enough and you can see some smoke rising from the pan, pour the egg mix into the pan
4. Cook it 30 seconds to 45 seconds and flip the eggs
5. Cook another side for 30-45 seconds or until the egg is golden yellow
6. Serve with white jasmine rice or brown rice and chili sauce (Sriracha) or Thai style chili paste (Nam-Prik)
Now, the secret ingredient my mom told me, but unfortunately I did not have it in my kitchen today. That secret is milk or evaporated milk, add a splash of that into your egg mix and it will make your eggs fluffier.
